Katia Liburdi is Associate Professor of Food Science and Technology and co-founder of Greenzym. She has extensive expertise in food biotechnology, enzyme technology and enzyme immobilization, with a strong focus on applications in the dairy and agri-food sectors.
Her research activity includes the development, stabilization and application of enzymatic systems, as well as the optimization of food processes through innovative biotechnological approaches. She has coordinated and participated in numerous national and international research projects and has significant experience in technology transfer and collaboration with industrial partners.
Within Greenzym, Katia provides scientific leadership and strategic guidance, ensuring the integration of academic research, technological innovation and industrial applicability in the development of sustainable plant-based enzymatic solutions.
Alessandro Crinò is a researcher and co-founder of Greenzym, with a background in food biotechnology and a strong specialization in plant-derived enzymes. His work focuses on the extraction, characterization and functional evaluation of vegetal enzymes, with particular attention to their application in food processing and dairy technologies.
He has been actively involved in research projects aimed at developing sustainable alternatives to conventional enzymatic solutions, bridging laboratory research with pilot-scale validation. Within Greenzym, Alessandro contributes to research and development activities, process optimization and the translation of scientific results into scalable industrial solutions.
Chiara Fabrizi is a food technologist and co-founder of Greenzym, with a specific focus on dairy technology and the application of plant-based enzymes in cheese production. Her expertise lies in the development and optimization of vegetable rennet, as well as in the evaluation of enzymatic performance during milk coagulation and cheese processing.
Her work addresses both technological and product-related aspects, including process efficiency, product quality and reproducibility. Within Greenzym, Chiara is responsible for applied research activities, pilot-scale trials and technical support for dairy companies, contributing to the translation of plant-based enzymatic solutions into real production environments.
